Late‑Summer Herby Potato & Green Bean Bake
Late August is prime potato‑lifting time. Whether you’re digging up first earlies that were left a bit too long or pulling out maincrop varieties, there’s something satisfying about tipping a bucket or lifting a fork and seeing those golden spuds tumble out. And while the beans are still producing nicely, this week’s recipe brings the two together in a comforting, simple bake that feels right for the season.
It’s warm but not heavy, uses everyday ingredients, and makes the most of two crops that are at their absolute best right now. A proper allotment‑to‑table dish.
Ingredients
- 600g potatoes, sliced into thin rounds
- 200g green beans, trimmed
- 1 onion, sliced
- 2 cloves garlic, crushed
- 2 tbsp olive oil
- 1 tsp dried mixed herbs
- Salt & pepper
- Optional:
- A handful of cherry tomatoes
- A sprinkle of grated cheese
- A spoonful of pesto
Method
1. Prep the Potatoes
Slice the potatoes into thin rounds. Parboil for 5 minutes until just starting to soften.
2. Cook the Beans
Blanch the beans for 2 minutes, then drain. They should stay bright green and crisp.
3. Build the Bake
In a large oven dish, layer the potatoes, beans, onion, and garlic. Drizzle with olive oil, sprinkle over the herbs, and season well.
4. Add Optional Extras
Cherry tomatoes add sweetness. Cheese gives a golden top. Pesto adds a herby punch. Use whichever suits your mood.
5. Bake
Cook at 180°C for 25–30 minutes until the potatoes are tender and the top is lightly golden.
Serving Suggestions
- Perfect as a side with grilled meats or halloumi.
