Refreshing Rhubarb and Ginger Cordial

After spending a long day down at the allotment this weekend – and feeling a little dehydrated (much like Richard mentioned last week) – I decided to make something refreshing using some beautiful rhubarb I had just picked.
The result? A wonderfully refreshing Rhubarb and Ginger Cordial, and I thought I’d share the recipe with you all.

Rhubarb and Ginger Cordial
Ingredients:
- 500g rhubarb, sliced into 2–3cm pieces
- 25g fresh ginger, sliced
- 250g caster sugar
- Juice of one orange
- Juice of one lemon
Method:
- Place all the ingredients into a saucepan and bring to a boil.
- Once boiling, reduce the heat to a gentle simmer and cook for 15 minutes.
- Remove from the heat, allow to cool, and then leave to rest in the fridge overnight.
- The next day, pass the mixture through a fine sieve, collecting just the liquid. (Don’t throw away the leftover fruit – it’s perfect for adding to a crumble or serving as a compote with yoghurt!)
- Pour the cordial into a sterilised bottle and store it in the fridge.
Your homemade rhubarb and ginger cordial will keep for up to 7 weeks when properly stored – although it’s so delicious, I doubt it’ll last that long!
